Japanese Gummy Candy Crystals Kohakutuo (kohakuto) recipe - super simple .



Liz at SugarGeekShow inspired me to make these fun crystal candies.

I made them before she posted her recipe.  So mine is slightly different.

I used :

16g agar powder (about 4tsp) (I used agar from Now Real Food)
1 can of Coconut Flavored Sparkling Water ( by La Croix)
2 cups of sugar
A few drops of food coloring.
Spray on edible glitter by Wilton

In a medium saucepan, bring the agar and sparkling water to a boil.  The add the sugar.  Bring back to a boil. Once the mixture begins to boil, pour into a 9x13 glass casserole dish. Add a few drops of food coloring and swirl throughout the mixture.

Cool for about 2 hours in the fridge and then cut into rectangles and then shape into crystals.  I then sprayed the faceted edges with spray on edible glitter.

Let air dry for at least 2-3 days to develop a crunchy exterior.  The inside will remain gummy.

Makes beautiful decorations.  Liz at SugarGeekShow suggested using them on a geode cake.  I will probably just display them as little candy jewels in a dish.

Whatever you decide to do, these are a cute, fun and super simple project to make with kids.
